What he most enjoys about the business, says Scooter Long, owner of The Butcher’s Choice in Fairfield, is “when people come and really love the food.”

The Butcher’s Choice is a family-owned mini-meat market and restaurant where everything is fresh. “We don’t have a freezer or microwave here,” because anything not used that day goes away, says Scooter.

“We take pride in everything we offer,” he says.

Their menu includes ribeye sandwich, ribeye salad, grilled chicken or turkey salad, and pizza, “Any way you want them.”

Starting at 4:30 p.m. they serve aged ribeye, filet mignon, or NY strips cooked to your standards. Fourteen-year-old Ruger Long, cooks all the steaks, according to his proud dad.

Each week will highlight a new feather special that ranges from baby back ribs to blackened catfish. “All of our pizzas are made with fresh dough daily,” adds Scooter.

Scooter gives a huge “thank you” to Sal Pjetrovic and his wife Razija for training them on making pizzas. “We have kept the tradition of Padrino’s Pizza at Butchers Choice, but added a little of our own twist, like adding smoked cheese, ribeye meat and ground brisket,” he says.

The establishment, located at 350 Highway 84 (in the former Padrino’s building), is open Thursdays and Fridays from 9:00 a.m. to 9:00 p.m. and – starting this weekend – on Saturdays from 5:00 to 9:00 p.m.

Also this Saturday, June 5th, guest Chef Sal will be fixing up two of his famous, best-selling dishes.

Those dining in are welcome to bring a bottle of wine to enjoy with their meal. “We have glasses and wine openers,” says Scooter.

For customers wanting to cook at home, The Butcher’s Choice also has a variety of meat that they produce in-house.

“All of our sausages are made by us, and they are our own recipes,” says Scooter.

All their beef is certified angus and graded to their standards by the USDA, top choice or higher grade. The beef is then aged for 28 days before being cut.

According to Scooter, these standards and processes make their steaks and ground a consistently good product.

“If you’re wanting fresh cut steaks to grill at home, come by and we will cut steaks for you,” he says. “We can also season your steaks with our own special blend.”

Owners Scooter and Nova Long have an eye on future expansion, and hope to offer outdoor seating this summer.
